Fokus penelitian ini adalah menganalisis istilah-istilah yang digunakan dalam proses pembuatan mie lethek, untuk mendapatkan hasil yang valid dan lengkap digunakan teori semiotik untuk mengetahui makna tanda dalam tahapan pembuatan mie lethek. Tujuan penelitian ini adalah untuk mendeskripsikan analisis semiotis dalam tahapan pembuatan mie lethek. Adapun metode penelitian dengan cara wawancara agar mendapatkan data dalam penelitian serta studi pustaka untuk mengetahui teori yang akan digunakan. Langkah pertama yaitu pengumpulan dan pengelompokan data berdasarkan proses pembuatan mie pada setiap pabrik mie lethek, langkah selanjutnya analisis data, setelah data terkumpul dan dikelompokkan pada setiap pengambilan data di tiga pabrik yang berbeda. Menemukan sesuatu hal baru pada proses pembuatan mie lethek di tiga pabrik tersebut terdapat perbedaan pengucapan kata serta menentukan tanda, penanda, dan petanda. Hasil penelitian yang ditemukan oleh peneliti, ditemukannya pengucapan kata yang berbeda yaitu nyembreti, yang berarti penguraian, dalam hal ini mie yang sudah masuk tahap pembentukan atau pencetak akan dipisah-pisah agar tidak menempel satu dengan lainnya, perbedaan pengucapan kata diperoleh dari data pengelompokkan proses pembuatan mie lethek di pabrik mie lethek Cap Do Kar.

The focus of this research is to analyze the terms used in the process of making lethek noodle, to get valid and complete results used semiotic theory to find out the meaning of the sign in the stages of making lethek noodle. Purpose of this study is to describe the semiotic analysis of the stages of making lethek noodle. The research method by interview in order to obtain data in research and literature studies to find out the theory that will be used. The first step is data collection and grouping based on the process of making noodle at each lethek noodle factory, the next step is data analysis, after the data is collected and grouped at each data collection in three different factories. Finding something new in the process of making lethek noodle in the three factories there are differences in pronunciation of words and determine sign, signifier, and signified. The results of the study found by researchers, the discovery of different word pronunciations is nyembreti, which means decomposition, in this case noodle that have entered the formation or printing stage will be separated so as not to stick together with each other, differences in pronunciation of the words are obtained from the grouping data of the manufacturing process lethek noodle at Cap Do Kar's Lethek Noodle Factory.
