MOISTURE SORPTION ISOTHERM AND SHELF LIFE PREDICTION FOR INSTANT COFFEE 3IN1

Kopi adalah salah satu minuman yang popular di Asia. Mereka dijual dengan berbagai rasa dan ukuran. Mereka dikemas dengan berbagai material dan ukuran yang akan mempengaruhi umur simpan dari produk kopi instan 3in1. Untuk membentuk kondisi penyimpanan yang baik untuk kopi instan 3in1, didalam studi ini sorpsi isotermis air di produk kopi instan 3in1 diteliti pada 30 derajat celcius dan 75 persen RH. Sorpsi isothermis air pada kopi instant 3in1 ditentukan menggunakan larutan garam tidak jenuh dengan aw 0,22-0,88. Persamaan Guggenheim Anderson de Boer (GAB) digunakan untuk menyesuaikan dengan hasil produk yang ada. Estimasi umur simpan produk dihitung menggunakan persamaan Labuza; dan alumunium foil dan metalized film digunakan sebagai material kemasan. Hasil menunjukkan bahwa umur simpan kopi instan 3in1 yang dibungkus dengan kemasan alumunium menunjukkan umur simpan yang lebih panjang dibangingkan dengan kemasan metalized film. Kemasan alumunium 116 kali lebih baik dibandingkan kemasan metalized film sebagai bahan kemasan untuk produk kopi instan 3in1.

Instant coffee 3in1 is one of the beverage that become popular in Asia. They are sell in various flavor and size. They were package in various material and size of package that will affect the shelf life of the coffee. To established conditions for proper storage of instant coffee 3in1,the shelf life of those sample were investigated based on their moisture sorption at temperature of 30 degree celcius and 75 percent RH. Moisture sorption of instant coffee 3in1 were determined using a sequence of saturated salt which corespond to series of aw of 0.22 -0.88. GAB equation was used for determining the profile of moisture sorption isotherm of the sample. Estimation of shelf life of the product was calculated based on Labuza equation; and Aluminum foil and metalized film were used as material packaging. The result shown that the shelf life of instant coffee 3in1 packaged with aluminum pouch showed longer results than those packed using metalized pouch. Aluminum pouch has a 116 times better than metalized pouch as package material for instant coffee 3in1.
