ANALISIS KECACATAN PRODUK ES KRIM KEMASAN 90 ml MENGGUNAKAN SEVEN TOOLS DI PERUSAHAAN SWEET SUNDAE ICE CREAM

Pengendalian mutu merupakan unsur penting di dunia usaha. Hal ini bertujuan untuk menjaga kualitas dan menjaga kepercayaan konsumen terhadap produk yang dihasilkan oleh perusahaan. Sweet Sundae Ice Cream merupakan industri yang bergerak dibidang Agroindustri yang memproduksi es krim dalam kemasan cup 90 ml, 1 l, 5 l, dan 10 l, serta gelato. Tujuan dari tugas akhir ini adalah untuk mengetahui jenis dan jumlah kecacatan produk es krim cup 90 ml dan menentukan langkah untuk mengendalikan kecacatan pada produk es krim cup 90 ml. Objek yang diteliti merupakan es krim kemasan cup 90 ml yang diproduksi oleh Sweet Sundae Ice Cream, sebab es krim kemasan cup 90 ml memiliki jumlah kecacatan yang paling tinggi dibandingkan dengan es krim kemasan lainnya. Data kriteria dan jumlah kecacatan diperoleh dengan melakukan pengamatan sebanyak 10 kali pada tanggal 7 sampai 22 Maret 2018. Data tersebut diolah menggunakan seven tools, yaitu check sheet yang digunakan untuk mengumpulkan data, stratifikasi untuk mengklasifikasikan kelompok; diagam pareto digunakan untuk menggambarkan kecacatan dari frekuensi terbesar hingga terkecil; diagram tebar untuk menggambarkan hubungan dua variabel; peta kendali digunakan untuk mengetahui kecacatan masih berada dalam batas wajar atau tidak; diagram ishikawa untuk mengetahui akar permasalahan; untuk histogram tidak digunakan karena tidak sesuai dengan jenis data yang didapatkan dalam penelitian ini. Hasil yang didapat dari penelitian ini adalah dari 3.500 cup es krim yang diproduksi terdapat 51 cup (14,69 %) produk cacat penyok dan 102 cup (28,66 %) cacat isi tidak penuh. Faktor utama penyebab terjadinya es krim tidak terisi penuh yaitu pekerja yang tidak menjalankan SOP mesin produksi, mesin produksi tidak dirawat secara terjadwal, dan tidak adanya penggantian sparepart mesin. Solusi yang dapat dilakukan perusahaan yaitu memberikan pelatihan, penyuluhan serta pengawasan kepada pekerja mengenai pentingnya SOP dan melakukan perawatan mesin.

Quality control is an important aspect in a business. It aims to keep the quality of product and customer trust. Sweet Sundae Ice Cream is an Agro industry that produces ice cream, which is packed in a 90 ml cup, 1 l, 5 l, and 10 l and gelato. The purpose of this study is to know the types and the number of defects in ice cream cup 90ml and determine the ways to manage it. The examined object was ice cream that was packed in cup 90 ml, which was produced by Sweet Sundae Ice Cream, because ice cream that was packed in cup 90 ml has the most defects. The criteria data and the number of defect was gotten by doing 10 times observation during March 7th to 22nd, 2018. After that, it was processed by using seven tools. They were check sheet that was used for collecting the data, stratification that has function to classify into a group, pareto diagram that was used to describe the defects in a process by sorting from the largest to the smallest frequency, scatter diagram to describe the relation between two variables, control chart was used to find out whether the defect was still within reasonable limit or not, and the last one, ishikawa diagram to find out the root of the problem, the histogram was not suitable with the obtained data, so it was not used in this study. The result from this study was from 3.500 cups of ice cream, there were 51 cups (14.69%) dented and 102 cups (28,66 %) not full-filled. The main reason of ice cream not full filled were the employee were not discipline in running production machine SOP, the production machine were not maintained on scheduled basis, and there were no machine sparepart change. Solutions that can be done by the company are provide training, counseling and supervision to the workers about the importance of SOP and do the machine maintenance.
