KLASIFIKASI AIR KELAPA DALAM KEMASAN DAN AIR KELAPA SEGAR BERDASARKAN ANALISIS SPEKTRA UV-VIS DAN KANDUNGAN MINERAL; CLASSIFICATION OF PROCESSED COCONUT WATER AND FRESH COCONUT WATER BASED ON UV-VIS SPECTRA AND MINERAL CONTENT

2015 | Skripsi | FMIPAObjective of this research was to classify processed coconut water and fresh coconut water, to study the use of derivative to the analysis result of Principal Component Analysis (PCA), and to evaluate sodium, potassium, magnesium, and calcium content in processed coconut water and fresh coconut water. The fresh coconut water, isotonic drinks, processed coconut water, and sparkling water each added demineralised water with a ratio of 1:2 and the absorbance measured using UV-Vis spectrometer. The absorbance of each sample scanned at 200-800 nm. The absorbance data then processed using Microsoft Excel 2013 to obtained the first and second derivative data. PCA performed on the raw data, first and second derivative from raw data using statistical software. The research then evaluated of sodium, potassium, magnesium, and calcium content using Atomic Absorption Spectrometer (AAS). Each samples analyzed with duplicate by using AAS. Statistical analyzed of sodium, potassium, magnesium, and calcium content performed by using ANOVA. The result showed that processed coconut water made from fresh coconut water based on PCA analysis. PCA’s model that used raw data was the best. The mineral content in processed coconut water that analyzed by using AAS and combined with ANOVA has significant differences with fresh coconut water.
