SINTESIS METIL KAPPA KARAGINAN SEBAGAI BAHAN DASAR EDIBLE FILM SYNTHESIS OF METHYL KAPPA CARRAGEENAN AS RAW MATERIAL FOR EDIBLE FILM

2015 | Skripsi | FMIPAModification of kappa carrageenan to methyl kappa carrageenan has been conducted as a raw material of edible film. The purposes of this research are (1) to synthesis of methyl kappa carrageenan, (2) to prepare edible film of methyl kappa carrageenan, (3) to study the mechanical properties of edible films of kappa carrageenan and methyl kappa carrageenan. Synthesis of methyl kappa carrageenan was performed using sodium hydroxide, dimethyl sulfate (DMS), and acetone at temperature of 50 °C for 3 hours. The methyl kappa carrageenan was analyzed by FTIR spectrophotometer. Edible films were prepared from the solution of kappa carrageenan 0.1; 0.3; 0.5; 0.7; and 1% (w/v), methyl kappa carrageenan 0.5 and 1% (w/v), and kappa carrageenan 0.5% (w/v) with the addition of glycerol 1% (v/v). The edible films’ mechanical properties were analyzed by Universal Testing Machine (UTM). Synthesis of methyl kappa carrageenan yields 1.31 g white solid methyl kappa carrageenan. Edible film of methyl kappa carrageenan and kappa carrageenan can be prepared from solution of 0.5 and 1% (w/v). Edible film of methyl kappa carrageenan has a lower tensile strength than that of edible film of kappa carrageenan, but it has the higher percentage of elongation. The addition of glycerol 1% (v/v) as plasticizer can increase the elongation of edible film of kappa carrageenan.
