Pengukuran Kinerja Aspek Eksternal Pada Jasa Katering Menggunakan Metode Supply Chain Operations Reference (Studi di CV Karunia Katering, Yogyakarta)

Supply Chain atau rantai pasok adalah sistem yang mengintegrasikan semua proses bisnis dari bahan baku sampai barang jadi untuk memenuhi permintaan konsumen terhadap barang pada saat yang tepat, tepat, kuantitas dan kualitas yang tepat. CV Karunia Catering sebagai fokus industri pada penelitian ini adalah katering ternama di Yogyakarta yang melakukan produksi dengan sistem make-to-order, memiliki banyak pelanggan yang berpengaruh langsung terhadap kinerja rantai pasok. Perusahaan make to-order memiliki risiko tinggi terhadap kinerja rantai pasok yang buruk sehingga memerlukan beberapa pengukuran. Pengukuran kinerja dapat dikatakan sebagai sumber data yang berisi informasi apakah rantai pasok berada pada kinerja baik atau buruk, yang sangat penting untuk perbaikan di masa depan. Penelitian ini fokus pada aspek eksternal rantai pasok. Pengukuran kinerja dilakukan dengan Suply Chain Operations Reference (SCOR) sebagai alat untuk identifikasi kinerja terkini pada aspek customer facing (Reliability, Responsiveness, Agility). Hasil setiap aspek dinormalisasi menggunakan Snorm De Boer. Hasil kinerja adalah 9 metrik aspek eksternal SCOR diidentifikasi dalam rantai pasok. Berdasarkan 9 metrik nilai tersebut, item flexibility dan forecast accuracy memiliki kinerja buruk. Saran untuk metrik tersebut adalah perbaikan timeline order dan strategi pemasaran lebih lanjut.

Supply Chain is a system that integrated all of business processes from the raw material until finished goods to meet customer demand of the goods at the right time, right place, right quantity and right quality. CV Karunia Catering as the focus industry at this research is well-known cateter in Yogyakarta, it has many customers that affect directly to suply chain performance. A make-to-order company has a high risk of poor supply chain performance, so that it needs multiple measurement. Performance measurement can be said as a source data that contains information whether supply chain is at good or bad performance, which is very important for improvements at the future. In this research, supply chain is focus on external facing. Performance measurement is done with Suply Chain Operations Reference (SCOR) as a tool for identification of recent performance in customer facing aspects (Reliability, Responsiveness, Agility). The result of each aspects are normalized by Snorm De Boer. The result of performance is 9 SCORs external facing metrics are identified in the supply chain. Based on those 9 metrics values, item flexibility and forecast accuray had bad performance. Suggestion for those metrics are production forecast improvements in timeline order and marketing strategic.
