Good manufacturing practices (GMP) merupakan pedoman yang berwujud sebagai syarat yang harus dipenuhi untuk mengolah input menjadi output keluaran. Tujuan akhir dari penerapan Good manufacturing practices (GMP) digunakan sebagai kebutuhan pokok bagi suatu industri khususnya pada sektor Agroindustri seperti pada PG. Djombang Baru yang merupakan perusahaan yang memproduksi gula. Analisis penerapan GMP pada PG. Djombang Baru meliputi aspek bangunan, fasilitas sanitasi, dan karyawan sesuai dengan Peraturan Menteri Perindustrian Nomor 75/M-IND/PER/7/2010 tentang Cara Produksi Pangan Olahan yang Baik. Hasil identifikasi penyebab ketidaksesuaian GMP pada bangunan, fasilitas sanitasi, dan karyawan kemudian diolah menggunakan diagram Pareto untuk menunjukan penyimpangan tertinggi dari ketiga aspek tersebut. Analisis 5 why’s untuk mencari akar masalah dengan faktor manusia dan material. Diagram ishikawa untuk menemukan faktor penyebab permasalahan pada industri. Berdasarkan hasil diagram pareto menunjukan bahwa presentase ketidaksesuaian terletak pada bangunan yaitu sebesar 57,14%, dilihat dari aspek bangunan penyimpangan tertinggi yaitu pada aspek konstruksi dinding, konstruksi atap dan langit-langit. Selanjutnya dilakukan analisis 5 why’s untuk mngidentifikasi akar masalah pada dinding dengan dua faktor yaitu metode dan material, aspek atap dapat menggunakan faktor material selanjutnya disajikan dengan diagram Ishikawa dan menemukan solusi agar dilakukan perbaikan dan perawatan dan kemudian mengganti cat dengan yang lebih baik. Faktor material pada aspek atap, bahwa atap diganti dengan bahan yang tidak menyerap panas.

A good manufacturing practice (GMP) is a tangible guideline as a condition that must be fulfilled to process from input into output. The final goal of applying Good Manufacturing Practices (GMP) is used as a basic requirement for an industry especially in Agro industry sector such as PG. Djombang Baru as a sugar-producing company. Analysis of the implementation of GMP on PG. Djombang Baru include aspects of buildings, sanitation facilities, and employees was matched to the regulation of Minister of Industry Number 75 / M-IND / PER /7/2010 on Good Production Process of Processed Food. The results of identification of causes of non-conformance to GMP on buildings, sanitation facilities, and employees after that processed by Pareto charts to show the highest deviations from these three aspects. Analysis of 5 why's was used find the root of the problem with Human and Material factors. Ishikawa diagram was used to find the factors causing problems in the industry. Based on the results of pareto diagram has shown the percentage of nonconformity of the building is 57.14%, consider from the aspect of the building the highest deviation which is on the aspects of construction of wall, roof and ceiling. Further analysis of the 5 why's to identify the main problem on the wall with two factors which was method and material. Aspect of roof could use material factors one the wall was presented with ishikawa diagram and the night solutions was perform repair and maintenance and then replaced paint with it better, factors material on aspects of roof should with material that perform roof with material that did not absorb heat.
