One type of protein contained in silkworm cocoons, which can be utilized as a cosmetic ingredient is sericin. Sericin has a weight of 20-30% of the total weight of the cocoon. To obtain the sericin, extraction process is required. One method of extraction that can be used is hot water degumming. There are a lot of study about hot water degumming, but as of now there is no research done yet in the kinetics model of sericin extraction with some various. Therefore, the objectives of this study were to examine the kinetic model of a brix changes at different temperature and ratio of hot water extraction conditions. The yellow type of Bombyx mori silkworm cocoon was used as experimental sample. The cleaned and cutted cocoons are boiled into hot water at a certain temperature and ratio. Variables tested for the extraction study included water temperature (95, 85, and 75 degree Celcius) ; and water to dried cocoon ratio (200, 150, and 100 ml/g) on extraction time and total sericin solution extracted. From the results were found that the various water temperatures gave an effect to the extraction time and total sericin extracted (grams). Whereas, the various water to dried cocoon ratio was not affect to total sericin extraction; the higher ratio only would make the extraction time longer. The best condition to extract sericin using hot water degumming found in this study was at 95 degree Celcius water temperature and ratio 100 ml/g. Whereas, the best fit order kinetic for extraction process of 2 studies was zero order modified by Peleg.
