Evaluasi penerapan Good Manufacturing Practices(GMPs) merupakan membandingkan aspek-aspek yang ada di PT Pagilaran dengan CPPOB 2010 untuk menjamin keamanan produk. Evaluasi dilakukan untuk mengetahui kesesuaian aspek�aspek yang diterapkan di PT Pagilaran dengan Peraturan Menteri Perindustrian Republik Indonesia Nomor: 75/M-IND/PER/7/2010 tentang Pedoman Cara Produksi Pangan Olahan yang Baik (Good Manufacturing Practices). Terdapat empat aspek yang di evaluasi yaitu, fasilitas sanitasi, mesin dan peralatan, pengawasan proses serta karyawan. Penelian ini menggunakan metode deskriptif kuantitatif yaitu berfokus pada kuantitas atau jumlah ketidaksesuaian.Pengumpulan data dilakukan dengan pengamatan dan penilaian penerapan sanitasi, wawancaraserta pengisian kuisioner. Setelah data terkumpul, data diolah dengan penilaian kesesuaian PT Pagilaran dengan Peraturan Menteri Perindustrian Republik Indonesia Nomor: 75/M-IND/PER/7/2010 tentang Pedoman Cara Produksi Pangan Olahan yang Baik (Good Manufacturing Practices). Dari hasil pengolahan data diperoleh jumlah ketidaksesuaian, selanjutnya diolah menggunakan diagram pareto dan diagram ishikawa.Sehingga akan diketahui akar penyebab masalah dan solusi untuk perbaikan aspek tersebut. Berdasarkan analisis yang telah dilakukan di PT Pagilaran diperoleh hasil bahwa aspek persyaratan karyawanmemiliki jumlah ketidaksesuaian paling banyak yaitu 75%. Aspek persyaratan karyawan di PT Pagilaran terdapat ketidaksesuaian yaitu karyawan yang sakit tetap masuk, terdapat karyawan yang menggunakan perhiasan dan karyawan tidak mencuci tangan sebelum bekerja. Sebaiknya perusahaan memberikan training dan memberikan teguran secara tegas.

Iman Sabarisman3 Abstract The evaluation of Good Manufacturing Practices (GMPs) implementation is comparing the existing aspect of PT. Pagilaran with CPPOB 2010 to ensure product safety. The evaluation is conducted to determine the Minister of Industry of the Rebublic of Indonesia Number: 75/M-IND/PER/7/2010 on Guidelines of Good Food Processed Production ways (Good Manufacturing Practices). There are four aspects evaluated, namely, sanitation facilities, machinery and equipment, process supervision and employees. This research uses quantitative descriptive method that focuses on quantity of number of nonconformities. The data collectetion was done by observation and assessment of sanitation implementation, interview and questionnaire. After data is collected, the data is processed by conformity assessment of PT.Pagilaran with Regulation of the Minister of Industry of the Rebublic of Indonesia Number: 75/M-IND/PER/7/2010 on Guidelines of Good Food Processed Production ways. The result of data processing obtained by number of mismatches then processed using Pareto diagram and Ishikawa diagram. Therefore, that will be known the root cause of the problem and the solution for the improvement of these aspects. Based on the analysis that has been done in PT.Pagilaran obtained result that the aspect of the employee requirement has the most number of nonconformities that is 75%. Aspects of employee requirement in PT.Pagilaran there is a mismatch of employees who are sick remain in, there are employees who use jewelry and employees do not wash their hands before work. The company should provide training and strict reprimand.
