UJI AWAL PEMBUSUKAN DAGING SAPI DI WILAYAH KERJA DINAS PERINDUSTRIAN, PERDAGANGAN, KOPERASI, DAN PERTANIAN KOTA YOGYAKARTA PERIODE JANUARI SAMPAI OKTOBER 2016

Kerja Praktik Lapangan di Dinas Perindustrian, Perdagangan, Koperasi, dan Pertanian Kota Yogyakarta dilaksanakan pada tanggal 3 Oktober sampai 14 Oktober 2016. Tujuan dari kegiatan ini adalah untuk mengetahui kualitas daging sapi dan pengawasan daging sapi yang dijual di wilayah Kota Yogyakarta periode Januari sampai Oktober 2016. Materi yang digunakan dalam penulisan Tugas Akhir ini didapatkan dari data hasil pemeriksaan kualitas daging sapi di Laboratorium Kesehatan Masyarakat Veteriner periode Januari sampai Oktober 2016, yang meliputi pengujian awal pembusukan daging. Hasil pemeriksaan sampel daging sapi yang dilakukan di laboratorium Kesmavet pada bulan Januari sampai Oktober 2016 diketahui bahwa kondisi 466 sampel pada pengujian awal pembusukan daging melalui uji eber dan uji postma adalah sebesar 2,80% (13/466) menunjukkan bahwa kedua uji positif, sebesar 20,40% (95/466) menunjukkan bahwa salah satu dari dua uji negatif, serta sebesar 76,80% (358/466) menunjukkan bahwa kedua uji negatif. Sementara untuk pengukuran pH daging yakni pH di bawah 5,4 sebesar 26,39% (123/466), pH antara 5,4 sampai dengan 5,8 sebesar 48,92% (228/466), serta pH di atas 5,8 sebesar 24,67% (115/466).

A profesional placement program has been done in the Office of industry, commerce, cooperative, and farming Yogyakarta, October 3rd till 14th 2016. The purpose of this program is figuring out the quality of beef and supervising the trading of beef in Yogyakarta regio in the period of January till October 2016. Materials used in this final project were gained from the data of the testing result of beef quality in the Laboratory of Society Health of Veterinary, period of January till October 2016 which included the examining of beginning phase of decaying process of beef. The test of beef samples done in the Laboratory of Society Health of Veterinary, January till October 2016 resulted in the findings that the condition of 466 samples in the testing of beginning phase of decaying process through eber and postma test were: (1) 2,80% (13/466) showed the both tests were positive, (2) 20,40% (95/466) showed that one of the tests was negative, (3) 76,80% (358/466) showed that the both tests were negative. Meanwhile, the results of pH measurement were pH under 5,4 was 26,39 (123/466), pH between 5,4 till 5,8 was 48,92% (228/466) and pH more than 5,8 was 24,67% (115/466).
