IDENTIFIKASI PENERAPAN GOOD MANUFACTURING PRACTICES (GMP) DI UNIT PRODUKSI PT MIROTA INDAH INDONESIA (MANNA BAKERY)

Abstrak PT Mirota Indah Indonesia saat ini belum menerapkan GMP sebagai pedoman untuk memenuhi standar mutu pangan dan belum pernah dilakukan sertifikasi GMP. Pentingnya penerapan GMP bagi perusahaan karena produk roti mudah rusak dan umur simpan pendek serta produk siap saji atau tidak melalui proses pengolahan kembali setelah diterima konsumen. Tujuan identifikasi untuk mendapatkan persentase kesesuaian dan ketidaksesuaian pelaksanaan sanitasi ruang lingkup GMP pada unit produksi PT Mirota Indah Indonesia dan mengidentifikasi penyebab ketidaksesuaian pelaksanaan ruang lingkup GMP pada unit produksi. Metode identifikasi yang digunakan adalah pemberian tanda centang pada tabel identifikasi berdasarkan CPPOB. Penghitungan persentase kesesuaian dan ketidaksesuaian dari hasil identifikasi. Pengolahan data dengan diagram pareto, analisis 5why�s dan diagram sebab-akibat dan penarikan kesimpulan. Hasil identifikasi kesesuaian penerapan sanitasi GMP sebesar 75% dan ketidaksesuaian sebesar 25%. Ketidaksesuaian pelaksanaan sanitasi pada masing-masing ruang lingkup GMP, bangunan 36%, fasilitas sanitasi 24%, mesin/peralatan 18%, bahan 10%, karyawan 25%, pemeliharaan dan program sanitasi 20%. Penyebab ketidaksesuaian penerapan sanitasi dipengaruhi faktor manusia karena kurangnya pengetahuan tentang sanitasi bangunan, tidak ada pelatihan tentang sanitasi untuk staf dan karyawan. Faktor metode yaitu tidak menganggap penting SOP sanitasi bangunan, SOP sanitasi bangunan tidak berdampak langsung pada produk. Faktor mesin yaitu mesin yang besar dan sulit dipindahkan, menghasilkan panas mengganggu kondisi bangunan. Abstract PT Indah Indonesia Mirota currently is not implement GMP as a guideline for food quality standards yet. GMP certification has never been done. Implementation of GMP is important for the company because bread has short life time and has no processing after received by consumers. The purpose of this study was to identify a percentage of conformity and nonconformity implementation of sanitation in the scope of GMP production unit PT Mirota Indah Indonesia and to identify the causes of nonconformities in the implementation of the scope of GMP. Identification method that used was giving a check mark in the table identification based CPPOB. Calculation of percentage of conformity and nonconformity from the results of identification. The data was analysed using Pareto chart, 5why's analysis, cause-effect diagram and make a conclusion. The results of identification of the application of GMP sanitary suitability 75% and 25% mismatch. Incompatibility implementation of sanitation in their respective scope of GMP were building 36%, sanitation facilities 24%, machinery and equipment 18%, materials 10%, of employees 25%, maintenance and sanitation program 20%. The cause mismatches application of sanitary influenced by the human factor was the lack of knowledge about the sanitation of the building, there was no sanitation training for staffs and employees. Method factors were there was no understanding the importance sanitation SOP building and building sanitation SOP no direct impact on the product. Machines factors was the size of the machines are large and difficult to move, the temperature of the heat coming from the engine affected the condition of the building.
