Pengaruh Bangsa Sapi dan Bobot Potong Terhadap Persentase Karkas dan Non Karkas di Rumah Potong Hewan Sumber Rejeki Kabupaten Cirebon

Penelitian ini bertujuan untuk mengetahui pengaruh bangsa dan bobot potong terhadap persentase karkas dan non karkas sapi yang dipotong di Rumah Potong Hewan (RPH) Sumber Rejeki Kabupaten Cirebon. Materi yang digunakan dalam penelitian adalah 40 ekor sapi potong yang terdiri dari bangsa sapi Peranakan Ongole (PO) sejumlah 20 ekor jantan dan bangsa sapi Brahman Cross (BX) sejumlah 20 ekor jantan. Bangsa sapi Peranakan Ongole (PO) dengan kelompok bobot potong (<375 kg) dan kelompok bobot potong (>375 kg) masing-masing sebanyak 10 ekor, sementara itu untuk bangsa sapi Brahman Cross (BX) dengan kelompok bobot potong (<375 kg) dan kelompok bobot potong (375 kg) masing-masing sebanyak 10 ekor. Data yang diambil dalam penelitian ini adalah bobot potong, bobot karkas, persentase karkas. Persentase non karkas meliputi, persentase kepala, kaki, kulit, hati, jantung, paru-paru, ginjal, dan saluran pencernaan. Data yang diperoleh dianalisis dengan dengan pola faktorial (2x2) menggunakan bantuan SPSS 23. Hasil penelitian menunjukkan bahwa Bangsa sapi Peranakan Ongole (PO) memiliki persentase kulit, jantung, paru-paru, dan saluran pencernaan lebih tinggi dibandingkan dengan Bangsa sapi Brahman Cross (BX). Bobot potong (<375 kg) memiliki rerata persentase karkas, kepala, kaki, paru-paru, dan saluran pencernaan lebih tinggi dibandingkan dengan Bobot potong (>375 kg). Terdapat interaksi antara bangsa dan bobot potong terhadap bobot karkas, persentase kulit, dan persentase jantung. Hasil penelitian di Rumah Potong Hewan Sumber Rejeki Cirebon dapat disimpulkan bahwa bangsa sapi Peranakan Ongole (PO) memiliki persentase kulit, jantung, paru-paru, dan saluran pencernaan lebih tinggi dibandingkan dengan bangsa sapi Brahman Cross (BX). Bobot potong (<375 kg) memiliki persentase karkas, kepala, kaki, paru-paru, dan saluran pencernaan lebih tinggi dibandingkan dengan bobot potong (>375 kg). Terdapat interaksi antara bangsa dan bobot potong terhadap bobot karkas, persentase kulit, dan persentase jantung.

This research was carried out to determine the effects of cattle breed and slaughter weight on the carcass and non carcass percentages at Sumber Rejeki Abattoir in Cirebon. The materials were 40 cattle consisting of two breeds were 20 males Ongole Crossbreed cattle (PO) and 20 males Brahman Cross cattle (BX). The Ongole Crossbreed cattle (PO) consisted with the categories based on their weight, slaughter weight (<375 kg) and slaughter weight (>375 kg) each are 10 cows. Brahman Cross cattle (BX) consist slaughter weight (<375 kg) and slaughter weight (>375 kg) each were 10 cattle. The variables collected were slaughter weight, carcass weight, carcass percentage. The percentage of non carcass cover, the percentage of the head, feet, skin, liver, heart, lungs, kidneys, and gastrointestinal tract. The data collected and were analysed by factorial analysis of variance (2x2) using SPSS 23. The results showed that Ongole Crossbreed cattle (PO) had higher percentage of the skin, heart, lungs, and digestive tract more than Brahman Cross cattle (BX). Slaughter weight (<375 kg) had higher mean percentage of the carcass, head, legs, lungs, and gastrointestinal tract compared with the slaughter weight (> 375 kg). There are interaction between cattle breed and slaughter weight on carcass weight, percentage of the skin, and percentage of the heart. Research in Slaughterhouse Rejeki Cirebon can be concluded that the Ongole Crossbreed cattle (PO) had higher percentage of the skin, heart, lungs, and digestive tract more than Brahman Cross cattle (BX). Slaughter weight (<375 kg) had higher mean percentage of the carcass, head, legs, lungs, and gastrointestinal tract compared with the slaughter weight (> 375 kg). There were interaction between cattle breed and slaughter weight on carcass weight, percentage of the skin, and percentage of the heart.
