PREDIKSI KANDUNGAN FISIKO-KIMIA DAN TINGKAT KEMATANGAN BUAH MANGGA ARUMANIS (Mangifera indica L.) MENGGUNAKAN GELOMBANG ULTRASONIK

Prediksi tingkat kematangan mangga saat panen sangat penting untuk menentukan kualitas dan cita rasa buah magga. Prediksi tingkat kematangan juga penting dalam proses distribusi perdagangan buah mangga. Umumnya buah mangga dipanen pada kondisi dewasa (mature-matang) namun belum masak (ripe) dan diharapkan mampu matang dengan sendirinya dalam beberapa hari dan memiliki kualitas yang sangat bagus saat sampai ke tangan konsumen. Pemanenan pada tahap yang belum matang menghasilkan buah dengan kematangan yang tidak merata, pengerutan yang berlebihan dan tingkat kemanisan yang rendah. Pemanenan buah dengan tingkat kematangan penuh, menghasilkan buah dengan umur simpan pendek dan rentan terhadap pembusukan. Masalahnya batas antara stadium masih muda, dewasa dan sudah tua sukar untuk ditentukan. Teknologi ultrasonik telah banyak digunakan dalam pengujian non-destruktif untuk mengetahui tingkat kematangan buah. Dengan mengetahui tingkat kematangan buah melalui teknologi ultrasonik, diharapkan buah dapat dipanen pada tingkat kematangan yang tepat. Tujuan dari penelitian ini adalah mengetahui hubungan kandungan fisiko-kimia dan memprediksi kematangan buah mangga arumanis dengan menggunakan gelombang ultrasonik. Penelitian ini terdiri dari tiga tahap, pertama pengukuran atenuasi gelombang ultrasonik dengan panjang frekuensi 40 �± 2 kHz terhadap 170 sampel mangga arumanis yang diambil dari kebuh di Pemalang, Jawa Tengah. Sampel dipanen mulai dari usia 60, 70, 75, 80, 85, 90, dan 95 hari setelah pembentukan buah (DAFS). Kedua, proses pengambilan data fisiko-kimia secara destruktif, yaitu kekerasan, total padatan terlarut (TPT), pH, dan titratable acidity (TA). Ketiga adalah pengembangan model regresi untuk mengetahui hubungan fisiko-kimia dan tingkat kematangan buah mangga dengan atenuasi gelombang ultrasonik. Hasil penelitian menunjukkan bahwa Kekerasan dan TA berkorelasi sangat kuat dengan atenuasi gelombang ultrasonik dengan nilai keofisein korelasi berturut-turut r= 0,936 dan r= 0,909. Sedangkan TPT dan pH berkorelasi kuat dengan atenuasi gelombang ultrasonik dengan dengan nilai keofisein korelasi berturut-turut r= 0,806 dan r= 0,818. Kandungan fisikokimia buah (kekerasan, pH, dan TA) dapat digunakan untuk memprediksi kematangan mangga Alumanis dengan nilai r = 0,816 (hubungan keduanya kuat) dan R2 = 0,665 (66,5% variabel kematangan buah dapat diprediksi dengan kandungan fisiko-kimia buah).

Predicting the maturity level of mangoes at harvest is very important to determine the quality and taste of mango fruit. Predicting the maturity level is also important in the distribution process of trade in mangoes. Generally, mangoes are harvested when they are mature but not ripe and are expected to ripen by themselves in a few days and have a very good quality when they reach consumers. Harvesting at the immature stage produces fruit with uneven ripening, excessive shrinkage and low level of sweetness. Harvesting fruit at fully ripen, produces fruit with a short shelf life and is susceptible to spoilage. The problem is that the stages between young, mature and ripening are difficult to define. Ultrasonic technology has been widely used in non-destructive testing to determine the level of fruit ripeness. By knowing the level of fruit maturity through ultrasonic technology, it is hoped that the fruit can be harvested at the right stage of maturity. The purpose of this study was to determine the relation between physico-chemical content and predict the ripeness of mango harumanis by using ultrasonic waves. This study consisted of three stages, the first was the measurement of attenuation of ultrasonic waves with a frequency of 40 �± 2 kHz to 170 samples of mango harumanis taken from the plantation in Pemalang, Central Java. Samples were harvested from the age of 60, 70, 75, 80, 85, 90, and 95 days after fruit set (DAFS). Second, destructive physico-chemical data collection process, firmness, total soluble solids (TSS), pH, and titratable acidity (TA). The third stage is the development of a regression model to determine the relation between physico-chemical and the level of mango fruit maturity with ultrasonic wave attenuation. The results showed that firmness and TA were very strongly correlated with ultrasonic wave attenuation with correlation coefficient values of r= 0.936 and r= 0.909, respectively. While TSS and pH are strongly correlated with ultrasonic wave attenuation with the correlation coefficient of r= 0.806 and r= 0.818, respectively. The physico-chemical content of the fruit (firmness, pH and TA) can be used to predict the maturity level of an harumanis mango with a value of r = 0.816 (the relationship between the two is strong) and R2 = 0.665 (66.5% of the fruit ripeness variable can be predicted by the physico-chemical content of the fruit).
