PENGEMBANGAN SENSOR LIDAH ELEKTRONIK (e-tongue) POTENSIOMETRIK BERBASIS MEMBRAN LIPID POLIMER

Penelitian ini melaporkan hasil pengembangan sistem sensor lidah elektronik potensiometri, sensor yang dibuat berbasis membran lipid untuk menganalisis potensial pada larutan lima rasa dasar (manis, asin, pahit, asam, dan gurih). Sensor dibentuk secara array sejumlah lima unit sensor. Pengukuran potensial menggunakan larutan Glukosa, Natrium Clorida, Quinine, Monosodium Glutamat, dan Citric Acid yang mewakili rasa pada makanan dan minuman. Sensor yang digunakan telah dilapisi dengan membran polimer Tetradodecylammonium bromide (TDAB). Sampel yang diukur dilarutkan dengan aquades dengan variasikonsentrasi 0,1M dan 0,01M untuk mengetahui sensitivitas sensor. Hasil yang didapatkan, sistem e-tongue mampu membedakan potensial pada setiap larutan lima rasa dasar. Tingkat molaritas pada setiap sampel juga mempengaruhi potensial yang terbaca oleh e-tongue.

This research report the results of the development of a potentiometric electronic tongue sensor system, a sensor made based on a lipid membrane to analyze the potential of a solution of five basic tastes (sweet, salty, bitter, sour, and savory). Sensors are formed in an array of five sensor units. The potential measurement uses a solution of Glucose, Sodium Chloride, Quinine, Monosodium Glutamate, and Citric Acid which represents the taste of food and beverages. The sensor used was coated with a Tetradodecylammonium bromide (TDAB) polymer membrane. The measured sample was dissolved with distilled water with various concentrations of 0.1M and 0.01M to determine the sensor sensitivity. The results obtained, the etongue system is able to distinguish the potential of each solution of five basic flavors. The level of molarity in each sample also affects the potential read by the e-tongue.
