Analisis Usaha Pengasapan Ikan di Desa Doropayung Kecamatan Juwana Kabupaten Pati

Penelitian ini bertujuan untuk : a) memberikan gambaran mengenai profil usaha pengasapan ikan dan b) menganalisis biaya dan pendapatan dalam usaha pengasapan ikan di Desa Doropayung, Kecamatan Juwana, Kabupaten Pati.Pengumpulan data lapangan dilakukan pada bulan Maret-April 2021. Data primer diperoleh melalui observasi dan wawancara dengan seluruh pengusaha pengasapan ikan (31 orang). Data sekunder dikumpulkan melalui penelusuran arsip dari Desa Doropayung dan Badan Pusat Statistik Kabupaten Pati. Hasil penelitian menunjukkan bahwa usaha pengasapan ikan dilakukan di rumah pengasapan milik sendiri yang terpisah dengan rumah hunian. Jenis ikan yang diasap adalah manyung dan jahan. Jumlah usaha pengasapan ikan di Desa Doropayung yaitu 31 unit yang terbagi menjadi 10 unit (RT 8) dan 21 unit (RT 9). Setiap unit usaha tergabung ke dalam kelompok pengasap. Kelompok pengasapan terdiri dari tiga kelompok, yaitu Kelompok Sumber Rejeki, Sumber Barokah dan Sumber Jaya. Usaha pengasapan ikan di Desa Doropayung terbagi menjadi tiga kelompok berdasarkan jumlah produksi dan tenaga kerja, yaitu kecil, sedang dan besar. Kelompok kecil adalah usaha dengan rata-rata produksi 200-300 kg per hari dan pekerja yang dimiliki sebanyak 5 orang. Kelompok sedang adalah usaha dengan rata-rata produksi 400-500 kg per hari dan pekerja yang dimiliki sebanyak 8 orang. Kelompok besar adalah usaha dengan rata-rata produksi 650-700 kg per hari dan pekerja yang dimiliki sebanyak 11 orang. Jumlah kelompok usaha kecil sebanyak 22 unit, kelompok usaha sedang sebanyak 7 unit dan kelompok usaha besar sebanyak 2 unit. Produk utama usaha pengasapan yaitu daging dan kepala asap, sedangkan produk samping yaitu gelembung dan isi perut ikan. Daging dan kepala asap dijual kepada pemilik usaha rumah makan, pengepul, dan tengkulak. Gelembung perut ikan dijual kepada industri pengolahan kerupuk, sedangkan isi perut ikan dijual kepada pembudidaya lele. Pada satu siklus produksi pengasapan (satu hari), biaya total rata-rata sebesar Rp6.775.093,93 (jumlah biaya tetap rata-rata Rp44.108,59 +biaya variabel rata-rata Rp6.730.985,34), sedangkan penerimaan rata-rata sebesar Rp7.378.764,85. Oleh karena itu, diperoleh pendapatan rata-rata sebesar Rp603.670,92. Nilai nisbah R/C usaha pengasapan ikan sebesar 1,09, yang menunjukkan bahwa usaha tersebut layak untuk diusahakan.

This study aims to: a) provide an overview of the profile of fish smoking business in Doropayung Village, Juwana Sub-district, Pati Regency and b) analyze cost and revenue of fish smoking business. Field data collection was conducted in March-April 2021. Primary data were obtained from all fish smoking businessman (31 people) through interviews and observations. Secondary data were collected from Doropayung Village Report and the Central Bureau of Statistics of Pati Regency. The study showed that the fish smoking production unit were separate from the residential house. The type of smoked fish were giant sea catfish and longsnouted catfish. Total of fish smoking business in Doropayung Village are 31 units divided into 10 units (RT 8) and 21 units (RT 9). Each business unit is incorporated into the smoking fish groups. There are three smoking groups in Doropayung Village: Sumber Rejeki, Sumber Barokah and Sumber Jaya. Based on the amount of production and employees, fish smoking business in Doropayung Village is divided into three categories: small, medium and large. Small group is a business with an average production of 200-300 kg/day and has 5 workers. The medium group is a business with an average production of 400-500 kg/day and has 8 workers. The large group is a business with an average production of 650-700 kg/day and has 11 workers. The number of small business groups were 22 units, medium business groups were 7 units and large business groups were 2 units.The main products of fish smoking business were meat and smoked head, while byproducts were gas bladder and fish belly. Meat and smoked head were sold to the restaurant, collectors and middlemen. Fish gas bladder were sold to the cracker factory, while the fish belly were sold to catfish farmer. In one smoking production cycle (one day), the average total cost were Rp6,775,093.93 (sum of an average fixed cost (Rp44,108.59)+an average variable cost (Rp6.730.985,34), the average revenue were Rp7,378,764.85 and the average income were Rp603,670.92. The R/C ratio was 1,09, which indicates that the fish smoking business was feasible.
