ANALISIS PENGELOLAAN PERSEDIAAN BAHAN BAKU MAKANAN DENGAN MENGGUNAKAN PENDEKATAN PROBABILISTIK PADA RESTORAN SITARA

Indonesia merupakan salah satu negara yang terkena dampak dari pandemik Covid-19 yang dimulai pada Tahun 2020. Pandemik Covid-19 tersebut bukan hanya berdampak negatif pada kesehatan masyarakat tetapi juga pada kegiatan ekonomi dan bisnis secara global. Para pelaku bisnis menilai pandemik Covid-19 menyebabkan perputaran usaha menjadi tidak lancar. Pariwisata merupakan salah satu sektor ekonomi dan bisnis yang terkena dampak dari pandemik Covid-19. Terdapatnya kebijakan baru dari pemerintah seperti salah satunya pembatasan untuk bepergian menyebabkan sektor pariwisata mengalami penurunan dalam penjualan. Pada waktu yang sama tingkat hunian hotel di Indonesia turun menjadi 20% sehingga manajemen hotel perlu meninjau kembali sistem yang dimiliki terutama untuk manajemen persediaan. Hotel Tara merupakan salah satu hotel di Indonesia yang mengalami penurunan pendapatan. Penurunan pendapatan di Hotel Tara yang mempengaruhi efisiensi pengadaan persediaan bahan baku makanan terutama yang bersifat perishable di Restoran Sitara yang merupakan salah satu fasilitas pada hotel. Terlebih lagi Restoran Sitara belum memiliki manajemen persediaan yang lebih akurat karena masih terjadi overstock atau stockout pada persediaan. Restoran ini juga belum memiliki jumlah pemesanan optimal serta titik pemesanan kembali sebagai acuan untuk melakukan pemesanan kembali. Analisis sistem pemesanan pada bahan baku makanan perishable dilakukan dengan analisis sistem tinjauan berkelanjutan (Q) dengan metode Hadley-Within. Analisis tersebut dilakukan dengan pendekatan probabilistik karena restoran memiliki jumlah permintaan yang tidak dapat diprediksi. Hasil yang didapatkan berupa jumlah pemesanan optimal (q0*), titik pemesanan kembali (r*), persediaan pengaman (SS), persediaan maksimum, dan total biaya persediaan. Kesimpulan yang didapatkan pada penelitian ini adalah penggunaan sistem pemesanan perusahaan yaitu asumsi dan intuisi menghasilkan total biaya persediaan yang lebih tinggi dibandingkan dengan penggunaan analisis sistem tinjauan berkelanjutan (Q). Penghematan yang dapat dilakukan pada total biaya persediaan yaitu sebesar 21%. Oleh karena itu, analisis sistem tinjauan berkelanjutan (Q) dapat dijadikan alternatif solusi untuk diaplikasikan pada Restoran Sitara di Hotel Tara Yogyakarta.

Indonesia is one of the countries affected by the Covid-19 pandemic which began in 2020. The Covid-19 pandemic not only had a negative impact on public health but also on economic and business activities globally. Businessman considers the Covid-19 pandemic effect the ineffectiveness of business activities. Tourism is one of the economic and business sectors affected by the Covid-19 pandemic. The existence of new policies from the government such as the restrictions on travel caused the tourism sector to experience a decline in sales. Therefore, at the same time the occupancy rate of hotels in Indonesia fell to 20% so that hotel management needs to review their system, especially for inventory management. Tara Hotel is one of the hotels in Indonesia that has experienced a decline in revenue. The decrease in revenue at the Tara Hotel which affects the efficiency of procurement of food raw materials especially the perishable materials at the Sitara Restaurant which is one of the facilities at the hotel. In addition, Sitara Restaurant has not had a more accurate inventory management because overstock or stockout still occur on the inventory. This restaurant also has not had the optimal number of orders and reorder points as a reference for reordering system. The analysis of ordering on perishable food raw materials was carried out by continuous review system (Q) using the Hadley-Within method. The analysis is carried out with a probabilistic approach because restaurants have an unpredictable number of demands. The results obtained are the optimal number of orders (q0*), reorder point (r*), safety stock (SS), maximum inventory, and total inventory cost. The conclusion obtained in this study is that the use of the company's ordering system, namely assumptions and intuition, results in a higher total inventory cost compared to the use of continuous review system (Q). The savings that can be made on the total cost of inventory is 21%. Therefore, the analysis of the continuous review system (Q) can be used as an alternative solution to be applied to the Sitara Restaurant at Tara Hotel Yogyakarta.
