PENILAIAN PENERAPAN ASPEK GOOD MANUFACTURING PRACTICES PADA PROSES PRODUKSI GULA KRISTAL PUTIH DI PG MADUKISMO, BANTUL, D.I.YOGYAKARTA

Pabrik Gula (PG) Madukismo merupakan sebuah perusahaan yang memproses tebu menjadi produk gula. Kualitas produk gula yang dihasilkan dapat dipengaruhi oleh penerapan program sanitasi yang baik dan benar. PG Madukismo masih menggunakan bangunan lama peninggalan Belanda untuk memproduksi gula sejak tahun 1958. PG Madukismo memerlukan penilaian penerapan GMP dalam produksi gula untuk menjamin kualitas gula yang dihasilkan. Tujuan penelitian ini adalah untuk mengidentifikasi penyebab ketidaksesuaian penerapan GMP di tempat produksi PG Madukismo. Penilaian ketidaksesuaian GMP menggunakan Peraturan Menteri Perindustrian Republik Indonesia Nomor 75/M-IND/PER/7/2010 tentang Pedoman Cara Produksi Pangan Olahan yang Baik. Peraturan Menteri Perindustrian Republik Indonesia Nomor 75/M-IND/PER/7/2010 digunakan sebagai dasar analisis penelitian. Penelitian dibatasi pada 9 dari 18 penilaian, yaitu aspek lokasi, bangunan, fasilitas sanitasi, mesin dan peralatan, bahan, pengawasan proses, produk akhir, karyawan serta pemeliharaan dan program sanitasi. Selanjutnya, identifikasi penyebab ketidaksesuaian dilakukan menggunakan metode Diagram Pareto, Analisis 5 Whys, Diagram Ishikawa dan SSOP atau Sanitation Standard Operating Procedures. Penilaian dilaksanakan periode 20 September sampai 20 Oktober 2019. Berdasarkan penilaian penerapan GMP di PG Madukismo terdapat 65 poin penilaian termasuk dalam kategori tidak sesuai dari 160 poin ketidaksesuaian terbesar terletak pada aspek pemeliharaan dan program sanitasi sebanyak 20 poin (54,1%) dari total ketidaksesuaian. Perbaikan dapat dilakukan oleh pihak industri dengan melaksanakan program pelatihan kepada seluruh karyawan untuk meningkatkan pemahaman mengenai pentingnya penerapan sanitasi pada industri pangan dengan melaksanakan GMP dan SSOP sesuai dengan CPPOB tahun 2010.

Madukismo Sugar Factory (PG) is a company that processes sugar cane into sugar products. The quality of sugar products produced can be influenced by the implementation of good and correct sanitation programs. PG Madukismo uses the old Dutch heritage building to produce sugar since 1958. PG Madukismo requires the application of GMP in sugar production to ensure the quality of the sugar produced. The purpose of this study was to identify the causes of non-compliance with the application of GMP at the PG Madukismo production site. The GMP non-conformance assessment uses the Industrial Minister Regulation of the Republic of Indonesia Number 75/M-IND/PER/7/2010 concerning Guidelines for Good Processed Food Production. Industrial Minister Regulation of the Republic of Indonesia Number 75/M-IND/PER/7/2010 is used as the basis for research analysis. The research is limited to 9 of 18 things, namely aspects of location, buildings, sanitation facilities, machinery and equipment, materials, process control, final products, employees, and maintenance and sanitation programs. Furthermore, the causes of non-conformances are carried out using the Pareto Diagram, 5 Why's Analysis, Ishikawa Diagram, and SSOP or Sanitation Standard Operating Procedures methods. The assessment was carried out from September 20 to October 20, 2019. Based on the implementation of GMP at PG Madukismo, there are 65 points included in the non-conforming category out of 160 points. The biggest non-conformance lies in the aspect of maintenance and sanitation programs as much as 20 points (54.1%) of the total non-conformance. Improvements can be made by the industry by implementing training programs for all employees to increase their understanding of the importance of implementing sanitation in the food industry by implementing GMP and SSOP in accordance with the 2010 CPPOB.
