Studi Literatur Sifat Fisika dan Analisis Nilai Indeks Bias Berbagai Jenis Susu terhadap Variasi Waktu Simpan

Telah dilakukan studi literatur parameter fisika berbagai jenis susu. Parameter fisika yang diamati adalah viskositas, sudut kontak, konduktivitas, dan sifat optiknya. Dari hasil studi literatur yang telah dilakukan, didapatkan bahwa nilai viskositas dan nilai konduktivitas menunjukkan nilai yang berbeda untuk berbagai macam jenis susu, baik susu sapi, susu kambing, dan susu kerbau. Hasil studi literatur ini menunjukkan bahwa parameter ini mempengaruhi kualitas susu. Penelitian terkait pengukuran indeks bias dan sudut kontak telah dilakukan dengan menggunakan berbagai jenis susu baik susu murni maupun susu UHT. Pengukuran indeks bias dilakukan dengan menggunakan Refraktometer Abbe setiap 24 jam sekali, sementara pengukuran sudut kontak dilakukan setiap 12 jam sekali. Setiap kali pengukuran, suhu susu berkisar 4oC. Hasil pengukuran indeks bias dan sudut kontak susu menujukkan nilai yang semakin bertambah besar seiring dengan lamanya waktu simpan di kulkas.

Literature study of the physical parameters of various types of milk has been carried out. Physical parameters observed were viscosity, contact angle, conductivity, and optical properties. From the literature study that has been done, it was found that the viscosity and conductivity values showed different values for various types of milk, both cow's milk, goat's milk, and buffalo milk. The result of literature study show that this parameter affects milk quality. The research has been carried out to measure refractive index and contact angle out using various types of milk, both whole milk and UHT milk. Refractive index measurements were carried out using an Abbe refractometer every 24 hours. Each time the measurement, the temperature of the milk is around 4oC. The results of the measurement of the refractive index and contact angle of milk show that the refractive index value increases with the length of time stored in the refrigerator.
