Evaluasi Penilaian Good Dairy Farming Practices Terhadap Kualitas Susu Segar

`Indonesia sebagai negara berkembang saat ini masih memiliki tingkat konsumsi susu yang rendah dibandingkan dengan negara berkembang lainnya. Rendahnya tingkat konsumsi selaras dengan rendahnya tingkat produksi yang disebabkan oleh kemampuan peternak sapi yang belum dapat menghasilkan susu sapi yang berkualitas secara optimal. Salah satu faktor penting yang mempengaruhi kualitas susu adalah penerapan Good Dairy Farming Practices (GDFP). Penelitian ini bertujuan untuk mengevaluasi GDFP dan hubungannya terhadap kualitas susu Sampel susu diambil dari 2 sapi perah produktif. Sampel susu yang diambil langsung setelah diperah, kemudian diuji organoleptik, uji kebersihan, uji derajat asam, uji alkohol, uji reduktase, pengukuran berat jenis dan pengukuran kadar lemak. Adapun penerapan GDFP dievaluasi menggunakan pengisian kuesioner. Hubungan antara evaluasi GDFP dengan kualitas susu dianalisis menggunakan analisa deskriptif. Hasil evaluasi GDFP tergolong ke dalam kategori III (Cukup). Aspek yang telah terselenggara dengan baik sebanyak 56,25% yaitu aspek kesejahteraan hewan serta aspek bangunan, fasilitas, dan peralatan. Aspek yang belum terselenggara dengan baik sebanyak 43,75% antara lain praktik veteriner yang baik, biosekuriti, penanganan susu, higiene sanitasi, dan higiene personal. Hasil pengujian susu menunjukkan kedua sampel tidak memenuhi standar pada uji kebersihan, uji derajat asam, uji alkohol, dan uji kadar lemak. Hasil uji organoleptik dan uji reduktase sampel susu A tidak memenuhi standar sedangkan sampel susu B memenuhi standar. Hasil uji berat jenis kedua sampel memenuhi standar. Hasil evaluasi GDFP dan uji kualitas susu menunjukkan bahwa penerapan GDFP yang belum dilaksanakan menghasilkan kualitas susu yang buruk.

Indonesia as a developing country today still has a low level of milk consumption compared to other developing countries. The low level of consumption is due to the ability of cattle farmers who have not been able to produce cow's milk with optimal quality. One of the important factors that affect the quality of milk is the application of Good Dairy Farming Practices (GDFP). This study aims to evaluate GDFP and their relationship to milk quality. Milk samples were taken from 2 productive dairy cows at UP2KH Faculty of Veterinary Medicine, Gadjah Mada University. Milk samples are taken directly after milking, then taken to Kesmavet Laboratory for organoleptic testing, hygiene test, acid degree test, alcohol test, reductase test, density measurement and fat content measurement. The application of GDFP is evaluated using questionnaire filling. The relationship between GDFP evaluation and milk quality was analyzed using descriptive analysis.. The results of the evaluation and GDFP and milk quality tests showed that poor application of GDFP resulted in poor milk quality. The results of the GDFP evaluation are classified into category III (Sufficient) where there are 43.75% aspects that have not been properly maintained. These aspects include good veterinary practice, biosecurity, milk handling, sanitation hygiene, and personal hygiene. Milk test results showed both samples did not meet the standards in hygiene tests, acid degree tests, alcohol tests, and fat content tests. Organoleptic test results and A milk sample reductase test did not meet the standards while milk B samples met the standards. The weight test results of both samples meet the standards. The results of GDFP evaluation and milk quality test show that the implementation of GDFP that has not been implemented produces poor milk quality.
