ANALISIS MANUFACTURING CYCLE EFFICIENCY SEBAGAI UPAYA PERBAIKAN EFISIENSI PRODUKSI GUDEG KALENG BU TJITRO YOGYAKARTA

Gudeg Bu Tjitro 1925 merupakan industri yang bergerak dalam pengolahan makanan tradisional, yaitu gudeg. Berdasarkan data produksi tahun 2019, produksi selalu berada dibawah target yang sudah ditetapkan perusahaan dan capaian produksi pada bulan Februari dan Oktober berada jauh dibawah target produksi tahun 2019. Penelitan ini menganalisis aktivitas bukan penambah nilai (non value added activities) dan penambah nilai (value added activities) pada perusahaan serta menganalisis manufacturing cycle efficiency (MCE) sebagai alat ukur dalam menentukan seberapa besar efektifitas produksi pada perusahaan. Penelitian ini dilakukan pada proses produksi gudeg kaleng Bu Tjitro 1925. Obyek yang diteliti berupa cycle time (processing time, inspection time, moving time dan waiting time) pada aktivitas proses produksi. Data yang dibutuhkan adalah data primer dan sekunder. Data primer diperoleh dengan cara wawancara dan observasi langsung untuk melakukan pengukuran, sedangkan data sekunder diperoleh melalui studi pustaka dan literature serta data yang dimiliki oleh perusahaan. Hasil penelitian ini menyatakan bahwa terdapat 63 aktivitas dengan 37 aktivitas yang menambah nilai dan 26 aktivitas tidak menambah nilai. Tingkat MCE pada produksi gudeg kaleng Bu Tjitro 1925 adalah sebesar 91,33%. Hal ini menunjukan bahwa pada proses produksi gudegkaleng masih mengandung aktivitas tidak menambah nilai sebesar 8,67%. Hasil MCE kurang dari 100% menunjukan bahwa proses produk masih belum ideal karna masing mengandung aktivitas bukan penambah nilai.

Gudeg Bu Tjitro 1925 is an industry involved in traditional food processing, that is gudeg. Based on the 2019 production data, the production is always below the target set by the company. The data in February and October is also far below the 2019 production target. This research analyzed the non-value-added activities and valueadded activities of the company. In determining the company production effectiveness level, this research analyzed the Manufacturing Cycle Efficiency (MCE). This study focused on the production process of canned gudeg products from Bu Tjitro 1925. The analyzed objects were cycle time (processing time, inspection time, moving time, and waiting time) in the production process activities. The data needed were the primary and secondary data. The researchers obtained the primary one through interviews and direct observation to take measurements. Meanwhile, the researchers collected the secondary one through literature reviews and company data. The research shows a total of 63 activities combined from 37 activities that add value and 26 activities that do not add value. The level of MCE in the production of canned gudeg of Bu Tjitro 1925 was 91.33%. It shows that the canned gudeg production process still contains activity that does not add value by 8.67%. MCE results of less than 100% indicate that the production process is still not ideal because each has non-value-adding activity.
