CV Serelia Prima Nutrisia merupakan perusahaan yang memproduksi sereal dengan bahan baku tepung umbi garut berbentuk flakes. Perusahaan ini berdiri pada tahun 2014 sehingga masih belum menerapkan adanya Good Manufacturing Practices (GMPs) yang diatur dalam CPPOB 2010. Selain itu perusahaan kurang memperhatikan pemantauan secara berkala terkait sanitasi. Oleh karena itu diperlukan penilaian sanitasi agar kualitas produk oriflakes dapat bersaing dengan produk yang lain. Studi kasus ini dilakukan dengan menilai kesesuaian penilaian GMPs di perusahaan. Metode yang digunakan adalah menilai persentase kesesuaian menggunakan borang yang berpedoman pada Peraturan Menteri Perindustrian Republik Indonesia Nomor 75/M-IND/PER/7/2010 tentang Pedoman Cara Produksi Pangan Olahan yang Baik (CPPOB) atau Good Manufacturing Practices. Hasil yang diperoleh dari perhitungan persentase akumulatif dari ke 12 aspek yaitu 68,48% sesuai dengan GMPs sedangkan sebanyak 24,45% tidak sesuai. Dari keseluruhan aspek yang tidak sesuai diperoleh hasil tertinggi pada aspek lokasi, fasilitas sanitasi dan karyawan yaitu sebesar 37,5%. Berdasarkan ketidaksesuaian tersebut maka perlu perbaikan akses jalan masuk disemen, ruang produksi dilengkapi dengan fasilitas cuci tangan dan karyawan disanksi ketika melakukan pelanggaran.

CV Serelia Prima Nutrisia is a company produces cereals using flakes of arrowroot flour. This company was initiated in 2014 so that still new company which has not implemented Good Manufacturing Practices arranged in CPPOB 2010. However company does not pay attention to regular monitoring related to sanitation. Therefore, it�s takes necessary to assessment sanitation so that the quality of oriflakes products can be compete with the other products. This study was conducted by assessing the suitability of implemented GMPs in the company. The method used in this study was assessing the comformity percentage based on the regulation of the minister of industry of the republic of Indonesian number 75/M-IND/PER/7/2010 about GMPs. The result of the calculation on accumulative percentage of the 12 aspects is 68,48% in suitable while not suitable is 24,45%. From all unsuitable aspect the highest result were obtained in the aspect of location, sanitation facilities and employees is 37,5%. Based on the unsuitable aspect, it is necessary to improve the access road and should be cemented. The production room is equipped with hand washing facilities and employees are penalized for violations.
