PENINGKATAN NILAI TAMBAH DALAM PRODUKSI TAHU UMKM KARYA MANDIRI DENGAN PENERAPAN PRODUKSI BERSIH

UMKM Karya Mandiri merupakan salah satu industri tahu rumahan di wilayah Banyuurip, Temanggung, Jawa Tengah. Saat ini pihak UMKM Karya Mandiri masih melakukan proses produksi secara tradisional dan sesuai dengan kebiasaan pekerja. UMKM ini sangat berpotensi untuk penerapan produksi bersih dalam proses produksinya sehingga dapat meningkatkan nilai tambah dan menurunkan limbah yang dihasilkan. Penelitian mengambil studi kasus di UMKM Karya Mandiri, Banyuurip Timur Rt. 07 Rw. 03 Kel. Banyuurip Kec/Kab. Temanggung, Jawa Tengah. Objek penelitian adalah proses produksi tahu putih mulai dari penakaran kacang kedelai hingga pengepresan. Metode yang digunakan dalam penelitian adalah metode produksi bersih tanpa mengeluarkan biaya yaitu good housekeeping dan modifikasi proses. Penelitian di wilayah pabrik UMKM Karya Mandiri menghasilkan adanya tingkat limbah cair dan padat yang cukup banyak dalam satu hari proses produksi. Untuk memperbaikinya, peneliti mengajukan 20 opsi produksi bersih dan pemilik menyetujui 12 diantaranya. Setelah implementasi dilakukan, terdapat peningkatan bahan baku sebanyak 0.5 %, penurunan konsumsi energi listrik sebanyak 1.125 kWh atau 22.06 %, konsumsi bahan bakar solar turun dari 14.3 liter menjadi 12 liter per hari atau sebanyak 16.08 %. Limbah cair yang dihasilkan dan dibuang langsung ke sungai menurun dari 13 liter menjadi 8 liter. Serta limbah padat berkurang dari 10 kg menjadi 9 kg.

Karya Mandiri is one of the tofu home industries in Banyuurip, Temanggung, Central Java. These days Karya Mandiri do their process production traditionally and according to the habit of their workers. This home industry is very potential for the implementation of cleaner production in their process production so they can enhance their value and reduce the waste from the production. The research was taken in Karya Mandiri tofu factory, Banyuurip Timur Rt. 07 Rw. 03 Kel. Banyuurip Kec/Kab. Temanggung, Central Java. The object of the research is the process production of white tofu starts from weighing the soybean until pressing the agglutination of tofu. Researcher used a cleaner production method with no extra cost, which is good housekeeping and process modification. The results of the research in Karya Mandiri home industry are quite significant amount of liquid and solid waste in one day process production. In order to improve it, researcher proposed 20 cleaner production option and the owner approved 12 among them. After the implementation were done, there are improvisations in using of raw material for 0.5 %, the consumption of electricity is reduced until 1.125 kWh or 22.06 %, the consumption of gasoline is reduced from 14.3 liter in to 12 liter per day or for about 16.08 %. Liquid waste that has been produced and thrown right through the river is reduced from 13 liter until 8 liter. Last but not least the solid waste is reduced from 10 kg in to 9 kg.
