Pengeringan buah-buahan secara osmosis

Dehidrasi merupakan proses penting yang dilakukan dalam teknik pengawetan buah-buahan. Pengeringan secara osmosis merupakan salah satu alternatif proses pengeringan yang dapat diterapkan untuk pengawetan buahbuahan karena pada prosesnya tidak memerlukan panas sehingga kerusakan bahan oleh panas dapat diminimalkan. Untuk medapatkan produk dengan kualitas yang baik maka perlu dipelajari teknik pengeringan secara osmosis. Pada prosesnya, potongan buah-buahan direndam dalam larutan berkonsentrasi tinggi. Air dari dalam bahan akan terambil dan berpindah ke larutan melalui dinding sel buah yang merupakan membran semipermiabel secara terus menerus sampai keadaan setimbang tercapai. Gaya pendorong perpindahan massa air dari dalam buah ke larutan gula adalah perbedaan tekanan osmosis. Beberapa model yang dapat menggambarkan fenomena pengeringan secara osmosis telah diusulkan oleh peneliti sebelumnya. Dalam tesis ini, model yang dianggap cocok yaitu model 1 (model sel ke sel) dan model 2 (model kontinyu) akan diuji kesesuaiannya untuk jenis buah-buahan yang berbeda dengan tujuan untuk melakukan generalisasi model. Percobaan di laboratorium dilakukan dengan merendam potongan buah berbentuk slab dengan ukuran tertentu dalam larutan gula. Kadar air bahan diukur setelah direndam untuk selang waktu tertentu. Percobaan dilakukan untuk pengeringan secara osmosis terhadap buah mangga, bengkuang dan apel pada variasi konsentrasi gula dalam larutan antara 60% sampai 70% dan variasi suhu antara 300 C sampai 50 0C. Data-data percobaan yang didapat adalah kadar air bahan setiap selang waktu tertentu. Data-data itu selanjutnya digunakan untuk menguji kesesuaian kedua model matematika yang telah direkomendasikan. Dari hasil perhitungan ternyata kedua model matematika memberikan pendekatan yang baik dan cocok dengan data percobaan dengan kesalahan relatif rata-rata untuk model 1 berkisar antara 1,27% sampai 5,41% sedangkan untuk model 2 berkisar antara 1,35% sampai 5,88%. Proses generalisasi model 1 menghasilkan satu nilai g (tetapan pada model 1) sebesar 24,4 dengan kesalahan relatif rata-rata antara semua data percobaan dengan hasil perhitungan sebesar 11,5%.

The important process in fruits preservation is dehydration. Air drying is commonly used in dehydration technique that involves the application of heat to vaporize moisture from the material. Heat can cause unwanted texture and vitamin content changes of the fruits. Osmotic dehydration is one of the possible processes of dehydration in which water can be removed without heat treatment so heat damage to color, flavour and vitamin content of fruits are minimized. By using this method, products with good quality can be obtained so it is important to be studied. Osmotic dehydration process is done by immersing the fruits into the high concentration of osmotic solution, such as sugar solution in which water inside the fruit moves into the solution through the fruit cell wall continuously until the equillibrium state is achieved. The natural fruit cell acts as a semipermeable membrane. The driving force of water mass transfer is the difference of osmotic pressure of water inside cell and that of in sugar solution. Some mathematical models that can be used to predict osmotic dehydration process have been proposed by previous investigators. In this research, the best models : model 1 (cell to cell model) and model 2 (continuum model) were tested for different fruits in order to generalize the model. The laboratory experiment was carried out by soaking the slices of fruits which were cut into slab and in fixed size, into sugar solution. After the slices of fruits was soaked for certain time, the moisture was then measured. The fruits used in experiment were apple, mango and screw pine. The variables studied were temperature (30 oC – 50 oC) and the concentration of sugar solution (60 % - 70 %). The experimental data obtained are in the form of the relation between moisture content in fruit as a function of time. It was used to test both of the mathematical models. The result of the study shows that both of model 1 and model 2 give good representations with experimental data. The average errors of model 1 are in the range between 1.27% and 5.41% and the ones of model 2 lie between 1.35% and 5.88%. The generalization of model 1 gives gamma (g) value of 24.4 with the average error to all the experimental data of 11.5%.
