Uji Fisik dan Kimiawi Serta Klasifikasi Aroma Berbagai Jenis Tepung Singkong menggunakan Electronic nose

Tepung singkong merupakan salah satu produk olahan dari singkong yang pada umunya terbagi menjadi tiga jenis, yaitu tepung cassava, mocaf dan tapioka. Pada ketiga jenis tepung tersebut, terdapat tepung yang memiliki karakteristik fisik sama, sehingga untuk sulit untuk membedakan tepung secara langsung. Tujuan dari penelitian ini ialah melakukan uji kualitas warna, kadar air dan kandungan sianida serta mengklasifikasikan karakteristik aroma tepung cassava, mocaf dan tapioka menggunakan electronic nose. Hasil penelitian menunjukan bahwa terdapat beda nyata pada parameter kadar air dan kandungan sianida antara tepung cassava, mocaf dan tapioka. Hasil deteksi aroma sampel tepung cassava, mocaf dan tapioka mampu diklasifikasikan menggunakan E-Nose sesuai dengan hasil score plot pada PCA serta penjelasan mengenai gas target yang berpengaruh dijelaskan pada hasil loading plot.

Cassava flour is one of the processed products made of cassava that is generally divided into three kinds, namely cassava, mocaf (modified cassava), and tapioca flour. From these three kinds of flour, there are kinds of flour that have the same physical characters, so it is difficult to distinguish the flour directly. This research aims to test the quality of color, water and cyanide content, and to classify the flavor characteristic of cassava, mocaf, and tapioca flour using electronic nose (E-Nose). The result shows that there is a significant difference in parameter of water and cyanide content of cassava, mocaf, and tapioca flour. The detection result of flavor in the sample of cassava, mocaf, and tapioca flour can be classified using E-Nose according to the result of score plot in PCA, and the explanation about target gas that is influential is described to the result of loading plot.
